A great build, good job! I love heavy role-playing builds like this, and this is enacted in a way I haven't seen before. I might even make this my next playthrough lol!. I think I'd allow my character to mine though, I believe a monk would see it as reaping the rewards of a hard days work rather than looting. Otherwise chopping wood could be considered looting as well because you're just splitting wood that's there instead of going out to gather it. Just my thoughts .

True enough - I guess chopping wood just seemed like a more 'monkish' activity, if that makes sense. And really it was a gameplay consideration that led me to avoid mining, since it would have made arrow management trivial in the early going.
Even in the late levels, when I was toting around a few hundred steel arrows at a time, there was still a sense that I could run out - and I would, since using relatively low-powered equipment meant I'd have to hit my targets more often than, say, a stealth sniper with enchanted gear. And running out of arrows meant more than just taking time out to gather materials; it meant spending some of my meager wealth on ore/ingots. Currently, my Arrowsworn has around 400 septims in his pocket :D.
So yeah, long story short, I avoided mining basically to keep myself poor.

Yep, its' the Roughspun Tunic you're wearing on the cart ride. :)
The hood is probably the one you're given as part of joining the College of Winterhold. He's also wearing Savos Aren's Amulet, having proceeded far enough in that questline.
Really, though, clothes and weapons are pretty much up to you, as long as they're not looted. I suppose there's nothing preventing you from crafting any weapon, as long as you could buy or get gifted the materials required. An Orcish bow would certainly be fitting - but Zephyr + Quick Shot is absolutely insane, and considering how quickly you can acquire Zephyr, I'd have a hard time finding a better weapon than that.
