I like how you left it really open in terms of race choice and focused on what it means to be a Knight - this opens up many many different avenues of executing a character with the essentially same skill set, yet always differently. For example, I had an instant idea about possibly playing as a Khajiit knight, possibly a former honor guard, who would really have to struggle with overcoming all the prejudice he faces because of his race. Yet as a character, he would share the same ideals and means to his ends as, for example, a Dunmer knight upholding Boethiah's glory.
