I've been trying to choose between a two handed paladin type (heavy armor/smithing based, with defensive and offensive restoration) and something more like a monk (again two handed, but with robes and flesh spells). Both would be using shouts, though the monk is more invested in being a member of the Greybeards and the paladin is more inclined to the mindset of the Blades. I really can't decide which to try out first.

I loved Dragonborn's Paralytic Mage. It's a fantastic (and pretty unique) take on the shield mage: cloak spells do the majority of damage while you power-bash and block lock the baddies, paralysis makes them kittens, and alchemy beefs up your destruction.
I had me some fun with that build :D

Played dozens and dozens of different builds and now i'm at the point where i don't really find anything fun and just end up ditching before i get halfway through. Looking for an extremely roleplay heavy build that i can play up to level 60+, I don't mind whether it's a mage, assassin, etc, however i do prefer the elven races. Mainly just want something different and high quality.

Syrabane I hear you, after thousands of hours playing the game "power builds" just don't do it for me. I'm definatly more interested in roleplay and character development and I think I may have a build you'll find interesting. The Druids of Galen is very roleplay heavy with a distinct progression for the player character, there is even a Faction Profile for the Druids if youwant to delve further into their role in Skyrim.

Here is a build that is based on Elderscrolls lore and is an atypical use of an Elven race, specifically the Altmer. The build also features a story like progression in his gameplay.

Both really awesome builds, the progression aspect, different armour sets, as well as the completion of certain quests at certain points are definitely major interests. Are there any builds with these qualities that are more based on arcane magic? and can also be played to a very high level?

Also some roleplay heavy builds that maybe are associated with dawngaurd i just really like the dawnguard questline. Serana IS SO FREAKING AWESOME
