You make it sound like heavy armor is hard to wield dude. Knights don't need to sneak, and should not be tranforming into werewolves other than the first time when it's forced. I only included the Companions for the redemption at the end. The Steed Stone helps you move better and later you get Conditioning on the left arm of the Heavy Armor tree.
All that said, feel free to us light armor, that can reach the armor cap pretty easily when you're training both Light Armor and Smithing. That's the beauty of this build it's actually quite flexible to people's personal preference as a warrior.
