I recommend taking a look at The Dark Sovereign by Raid and Curse, though it appears that the images are broken at the moment.

How about the Despoiler by Zach? Basically a bandit build but with a fancy twist, and its no crafting!

I'm pretty new to Skyrim, I know a pretty good amount about the different skill trees, and general mechanics of the game. With that said though, I tend to get characters to about level 25 and then lose interest. My most recent playthrough was the Swordmaster by Soneca the Exiled, I really enjoyed it at first and the combat was made better by mods like Smilodon, but other things quickly started to seem more interesting. I like the idea of smithing and enchanting, even alchemy if it didn't feel like such a pain to level up. Sneak isn't horribly boring for me, but I've had multiple builds already that use it. Alteration feels kinda weak, but I'm probably just doing something wrong. Any recommendations for a build that's not too complex?

Well you seem to show quite an interest in crafting skills, so the Knights of Iron by Shin and Lozhar should be perfect for you. Its not too complex but has some nice roleplay depth, its kitted out in heavy armour and hits stuff with a big hammer so for newer players there aren't such as yourself there aren't any mind bobbling gameplay mechanics to tangle with, and if you want to learn about the mechanics of the game getting an indepth knowledge of all the crafting skills is a good place to start.

It seems pretty cool, but something about a build that relies solely on crafting and speech feels a bit boring to me. Also, trying to balance all three crafting trees seems like it may be a bit overwhelming.

I've been looking around and an anti-mage style build seems kinda cool. I saw the Obsidian Sentinal, but I think I would prefer a more aggressive approach to a build. Probably with light armor and enchanting, maybe a dual wielder. I also really like the Dragon Aspect shout, and the Slow Time shout. I might like bound weapons but as far as I can tell they end up being pretty bad later into the game, also the rest of conjuration isn't that interesting to me.
