This is a much darker take on the holy vigilant theme and well suited to the snowy north, with it's dark nights and howls echoing in the forests. Do you think a Nord would also make a good Grim, matching their wild folktales?

Absolutely. I often use Imperials where  Nords are appropriate because I find Voice of the Emperor more useful than Battlecry, and its easy to RP as being essentially the same effect: causing the enemy to choke up and freeze in fear. So the same thing can totally be accomplished with a Nord, and the pale complexion will look even more fitting.
