Maybe start a little easier with Twilight or Rarity? While yes, you'll be doing another magicka-centered build after this one, their abilities are more easily brought over to the Elder Scrolls franchise.

Got me thinking, are there any white robes that are obtainable without console commands? If so I could add a Gandalf the White part to this build.

I like it! Might I suggest that an Alteration or Restoration Staff would fit the Gandalf look a bit better, and perhaps the Brown or Green Robes added by Hearthfire.
Alchemy might also go well with the Gandalf theme and it could be used lieu of Enchanting. It would be especially useful to boost skills like armourer with a loop (if you don't mind a glitch) that could make the steel sword much more viable as an endgame weapon.
