First off, +1! It's good to see that there are still quality builds being made.
I do have a complaint though. Even though it's vital to the build, I was kind of disappointed seeing the Ebony Blade in this build. When I saw the build title, I was thinking of a character relying solely on regeneration enchantments, potions and powers (The Lady Stone), as the Ebony Blade absorbs health, it feels kind of out of place, for me anyway. What would be interesting, is a character that I did previously, using stamina absorbs to fuel itself in battle, you could roleplay that the character has increased defences (health region), but fatigues quickly as a result, perhaps born under a certain sign, cursed/ blessed by the Hist etc.

While I still think my decision to use the Ebony Blade was a good one, I can see what you're getting at. It would be entirely possible to play the build without it though. For example, you could swap out Enchanting for Alchemy and the Lord Stone for the Lady Stone; then use Fortify Restoration loop to boost the regeneration effects of the Lady into the triple digits.

I didn't think about the Lady Stone with the resto glitch, but that would be very interesting, I can feel ideas forming already...

I don't hate katanas and the like, but I do think that the Blades Sword and Crossbows are overused in builds simply for their "cool factor."
I was considering the Lady Stone, but you really have to milk the resto glitch to make it worthwhile. For example, you need a 300% Fortify Restoration potion in order to get its regeneration boost into the triple digits. While it's not something I'd wanna do with this build, it's definitely worth pursuing for a different character build.
