If I translate my birthday into the game given my current age and game's starting date (17th of Last Seed, 4E201) my Skyrim birthday will be: Fredas, Sun's Dusk 3, 4E178. And I have always chosen The Atronach Stone on all my characters

Nope. My birthsign would be The Shadow, and I can't say I've ever used it, even on a stealth character. I usually use The Lord or Lady stones. My current character would be quite suitable for The Lady stone, though I tend to imagine she was born in late winter for some reason.
