When Fjorrod exited Helgen, he saw Alduin fly past Riverwood, fly past Whiterun, and just keep going over the horizon. To be fair, he didn't know that the dragon was Alduin, World-Eater, and guards or not, those towns are toast if Alduin decided to attack. But more importantly, Fjorrod was a wanted man and felt that he couldn't return to Whiterun.
So he followed Ralof's advice and sought refuge in the Stormcloaks. Alduin was nowhere in sight. That and he's not exactly a hero when the game starts. He's like anyone else; a simple man, and a hunter with a normal life and job. He was more concerned about protecting his land from the Imperial Army who he knew was an immediate threat.
I think you can actually run around Lydia though! If you juke around the right pillars and don't enter her bubble, I think you can pretty reliably evade her.
As for the perks, Elven was a stepping stone for Nordic Carved. A necessary evil that we would have skipped if able. The level 30 perks were an interesting challenge for us. We had to make level 25 a complete build, which meant the 5 perks for the bonus levels had to add to Fjorrod without changing his character or changing how the build played. We decided that it made the most sense for him to simply become much better at everything he already knew, and Critical Shot represented his improved ability to accurately target critical areas on enemies and hunted prey.
