At this stage these are initial notes, what she could find out before she arrived. More creatures, notes on alchemy and souls, any weaknesses etc. will come as I encounter them.
A small critique. This is a Dunmer writing this, correct? I don't know, but my inclination would be to alphabetize the Bestiary. Or, make a distinction between prey animals and predatory. Just a small thing, otherwise, again a very cool way to present this.
One of the main creatures I hunt in Skyrim are Hawks. Their feathers have cure disease as their first attribute making them valuable. To even it out you could have Artic fox as well. Maybe something like

These birds of prey can often be found nesting in the treetops of giant furs when not silently gliding overhead in search of prey. Their feathers are useful to cure disease and are effective if eaten by themselves. A large number are said to plague the docks of Solitude. No doubt the fishing vessels gives them an ample supply of food.
Artic fox
Similar in both shyness and temperament than their regular forestry cousins. The Artic fox survives on bird eggs and rabbits in the mountains where its thick white fur gives excellent camouflage as well as keeping the beast warm in the cold wintery environment.
