I'm member of a team that tries to represent medieval knights in both philosophy and appearance. So I have quite an experiance.
About the weapons: they had to master fighting with their hands, bow, and of course a melee weapon of choice. Now, that weapon could be a mace, one-handed sword, longsword (it is usually wielded with two hands, but one hand is an option as well), greatswords weren't widespread because wielding it needed immense strength, the speed was low, and had no defense against arrows. Some bold men used it, I don't claim that it wasn't applicated at all, but with common sense: a shield and a one-handed sword offered greater security. Greatswords usually had ceremonial purpose.
Crossbows were really banned by one of them popes, because with only pulling the trigger, a plain, lowborn soldier could kill the (maybe only) heir of a noble dynasty, whose training took years, and whose equipment costed about a yearly money income of a village.
Roleplaying aspects:
1, In case of someone really cares about feeding their character, fasting (not eating by religious reasons) is a good option. Different types of fast can be applied (maybe for different levels of penitence):
- No meat (except fish)
- Low amount of food
- No alcohol
2, Knights were almost always nobles, so with Hearthfire installed, you could own a homestead for the landlord feeling.
3, Pilgrimages to venture on, but I think you mentioned that.
4, When you are in town, and don't want to impress anybody, wear clothes. - Belive me I experienced wearing armor for 8 hours, such a "pleasure" -
5, Knights were erudite as well, read books for self-improving.
