Thanks for the like! You can always play the fallen knight who rejects the honor code and instead makes pacts with the daedra.
The main reason I put so many perks into Smithing was so that you get a new set of melee weapons every 10 levels or so and then by the end you have the most legendary sword imaginable, one made of dragon's bones, seems like the ultimate knight weapon. But you're absolutely right, Steel Plate is the perfect choice in terms of knightly appearance and I sprinted to level 50 Smithing as soon as I could.
If you're a fallen knight you can also get Uthgerd as a follower and bring her to the middle of nowhere to kill her for her steel plate, this works right from the beginning of the game so at like level 5 you already have it
